I am considering taking the Essentials of Fine Cooking (8-weeks) course and you mentioned you have taken it.  How serious is the Essentials course compared with Culinary Techniques?  I want to do Culinary Techniques but I can't afford it, and I'm worried that Essentials won't be serious/advanced enough for me.  Any advice?&lt;/p&gt;
